HI Charles,
I teach gluten free sourdough bread baking in Eastern Massachusetts. I wish you well in your new workshops! I believe our breads differ in that mine are free of dairy, eggs, and yeast as well as gluten. I created mine to manage my own food allergies. I believe you will find, as I have, that your students will be deeply grateful for the work you have done and shared with them.

Hi and thanks for the feedback. My breads are also free of these ingredients, as well as free of added sugars and oils. I sometimes do modify basic recipes with dairy, sugar, yeast or oils to achieve other flavors but these are not necessary for true sourdough breads. All you really need is flour, water, salt, leaven and Xanthan gum.

I found you through a link from 2005!! Cool huh? I love teh interwebs.
I was wondering if you have a recipe for your sourdough starter and maybe some pictures of what it is supposed to look like?
I would love to come to your classes but it is a bit of a hike from Sydney Australia where I live.
